Zucchini Bars

I didn’t take a picture of these bars, but I am pretty confident that I wouldn’t have had time, as we ate them FAST!  I would just go ahead and call this a zucchini cake myself, but that’s not important.  The frosting is delicious, the cake moist, and I don’t think I heard one complaint.  Enjoy!

Zucchini Bars

3 eggs
1 c vegetable oil
2 c white sugar
2 tsp vanilla
2 1/3 c all-purpose flour
1/4 tso baking powder
2 tsp baking soda
1 tsp salt
2 c grated zucchini

1/2 c butter
3 oz cream cheese
2 1/2 c powdered sugar

Preheat oven to 350 and grease a 9×13 pan.

In a large bowl, mix the eggs, oil, sugar and vanilla until well blended.  Combine the dry ingredients and stir into the mixture.  Gently mix in the zucchini.  Spread the batter into the prepared pan.

Bake for 20-25 minutes, until a toothpick inserted in the center comes out clean.  Let the bars cool while you make the frosting.  Blend the butter, cream cheese and sugar until blended; spread over the bars once cool.
