Yesterday I purchased 4 lbs of strawberries (yay Safeway), and found the perfect way to use some of them up — strawberry bread! Today while looking at one of my favorite food blogs I saw this recipe, which was a perfect coincidence…. I mean strawberry shortcake is good, but you can only have so much! So here’s recipe I haven’t tried, but I’ll make it tonight and let you know what I think.
- 1/2 cup chopped walnuts
- 1 1/4 cups flour
- 1 cup sugar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon nutmeg (I’ll be using cinnamon instead per the advice of the blog where I found this!)
- 1 tbs lemon zest, or 1/4 tsp lemon oil
- 2 large eggs
- 1 1/4 cup mashed strawberries
- 1/2 cup vegetable oil
Preheat the oven to 350 degrees. Grease and flour a 9×5 inch loaf pan.
Whisk together the walnuts, flour, sugar, baking soda, salt and nutmeg. In a separate bowl, whisk together the lemon zest, eggs, strawberries, and vegetable oil. Combine the wet and dry ingredients together until well blended.
Pour the batter into the prepared pan, and bake for 55-60 minutes. Cool the bread for 15 minutes, then remove it from the pan onto a wire rack to cool completely. For best flavor and easiest slicing, wrap the bread while still slightly warm and let set overnight.
